Anyone know what the deal is with the thermometer? Mine has both max/min settings, and each setting has readings for "in" and out". Which number should I be looking at?

You should probably be looking at the "Out". The Out reading is the probe. In is most likely the thermometer itself. It really depends on the thermometer. Read the manual which came with the thermometer.

Gotcha. Also, should the actual thermometer stay outside the packtite? Sorry, I know these q's probably seem really basic..

Yesm the thermometer should stay outside the packtite so that you can monitor the temperature.
